The Maker white wine

A farm that, although it shares characteristics with our purest Verdejo farms, was chosen for some particular characteristics, especially for this project. Offering an orography with different unevenness producing small orientations and making a natural division of two types of soils with different characteristics from each other.

The harvest was carried out at the end of August in a single batch where the first “flower” musts (without pressing) were separated for fermentation. Like Verdejo, fermentation is controlled at a low temperature, trying to maintain it during its first stage for as long as possible, this being where its primary characters make the variety strong. After fermentation, it rests on its lees for 5 months with a short rest in the bottle before going on the market.
