The needles have a wide range of nuances that distinguish them from sardines, such as their unmatched power of flavor and firm texture.
Small specimens, caught in Galician waters, are carefully selected, always within the limits established by legislation in terms of sustainability .
Once cleaned and toasted, they are manually packed one by one, before submerging them in olive oil. As time passes, the oil gradually improves its flavor thanks to the influence of this quality fish.
