It comes from 100% Ibérico pigs raised free-range and fed acorns during the *montanera* season, which provides its characteristic juiciness, aroma, and depth of flavor.
Its slow curing, for over 3 months in natural drying rooms, allows each piece to develop its full potential: an intense red color, a firm yet pleasantly unctuous texture, and a perfect balance between the natural sweetness of the marbled fat and just the right touch of spices.
