This 50% free-range Iberian ham from LOLO is not for the faint-hearted. This meat is full of character, raised with care, on premium pastures and grains. The cross between a 100% Iberian mother (with pedigree, yes sir) and a Duroc father results in a balanced piece, with less external fat but a gleaming infiltration.
During the Montanera, the pigs feast on acorns and grass, and it shows in every slice: juicy, flavorful, and with that touch that only the best know how to recognize. It's knife-cut by a master with more skills than shame.
