Made from purebred Iberian pigs, raised free-range and fed exclusively on acorns during the montanera (mountain) period, this 7–8 kg ham is slowly cured in natural cellars for 44 to 48 months. The result: silky fat, the presence of tyrosine crystals, and an elegant aroma with nutty notes, hinting at a melting texture and a long, deep flavor.
