Directly from the Galician Rías, these razor clams (Ensis siliqua) represent one of the most prized gems of Atlantic seafood. They are caught exclusively at their peak, during the months of May and June, when the mollusk reaches its optimal point of flavor and texture.
After capture, they spend 24 hours in a purification station to guarantee their quality. They are then cooked to perfection and shucked by hand, one by one, respecting the piece and maintaining its firm, juicy flesh and that perfect balance between sweetness and marine salinity that only well-prepared Galician produce offers.
Finally, they are preserved in olive oil, which enhances their flavor without masking it, providing richness and a well-rounded mouthfeel. The result is an honest gourmet preserve, made with care and traditional processes that prioritize quality over quantity.
