Cerrón Cheeses' Monastrell Red Wine-Aged Goat Cheese is one of those cheeses that doesn't need to shout to make an impression.
Artisanally made with raw milk from Murciano-Granadina goats, this cheese first undergoes a ripening process in a cellar, where it develops texture, aroma, and complexity. Then comes the magic: its immersion in Monastrell red wine, an emblematic variety from southeastern Spain.
The result is an elegant cheese with character. Creamy, intense, and with a natural rind stained by the wine, it immediately signals that something serious is happening here.
On the nose, there are hints of clean goat's milk and very subtle wine notes. On the palate, it plays between lactic and fruity, with nuances reminiscent of raisins, red berries, and soft tannins.
