There are no filters or half measures here: this cheese is made for those who go straight ahead. More than 12 months of aging, raw milk from native sheep, and a personality that doesn't ask for permission. One taste and you know you've crossed a line.
Its firm yet buttery texture crumbles with that crumbly touch that only the best have. The rind, with notes of wine, prepares you for what's to come: a deep, powerful flavor, with an elegant spiciness that embraces you (or shakes you, depending on the day). Just the right acidity, just the right amount of salt, and an aroma that enters before the bite.
This aged cheese is the star of the table, the one that goes well with a strong glass of red wine or a well-hopped craft beer. You can also grate it over pasta, top a burger with style, or simply leave it in the middle of the table and watch it fly.

Recommendations: Keep refrigerated between 4º and 8º. Once opened, wrap in cling film.
