Soft blue cheese made from raw sheep's milk with fruity and nutty notes and natural rind. It is a creamy, sweet, lactic and spicy spicy cheese that increases its intensity over time. When cut, you can see its ivory color with the characteristic blue-green veins caused by the development of Penicillium roqueforti.
It can be accompanied by sweet raisin or fig breads, dried fruits, wild fruit jam or sweet dried fruits such as apricots, peaches and raisins. Another interesting option is to taste it together with a sweet wine.
