Anima Mundi Gres white wine

Gres is a single-varietal Xarel lo from 50- to 60-year-old bush-aged vines in the Alt Penedès region. Its production process is unique: it is divided into three parts: one fermented in old 500-liter barrels, another in clay amphorae, and the last with fermentation on its own skins and aging in stainless steel vats. The wine then ages for six months in the same container where it fermented, with spontaneous fermentation. The result is a wine unfiltered, gastronomic, with exceptional complexity and character.

Pairing: Ideal with steamed, boiled, or grilled fish and seafood, as well as marinated, ceviche, or raw. It also pairs perfectly with fresh cheeses, salads, and raw vegetables. Dressing with citrus fruits and aromatic herbs enhances the pairing even more.
