Jerez Exceptional Harvest Wine

“Ripe grape locked in a bottle.”
That is how the Ximénez-Spínola winery itself defines this unique, limited-production white wine, crafted exclusively from Pedro Ximénez grapes overripened on the vine. This method allows the fruit to naturally reach a higher sugar content and aromatic concentration, without the need for extreme drying.
The wine rests for 4 months in old American oak barrels, previously seasoned with oxidative-aging wines. This step adds structure, subtle notes of nuts, spices, and fine wood, while always respecting the prominence of the grape.
The result is an intense and elegant dry white wine, with a silky texture and a slight astringent touch that gives it nerve. A perfect choice for those who want to discover everything Pedro Ximénez has to offer beyond the sweet.

Visual: Bright golden color with copper highlights, clean and attractive.
Nose: Intense aromas of ripe fruit (apricot, quince), dried flowers, notes of honey, citrus peel, and a spiced background.
Palate: Dry, unctuous, with good structure and a touch of astringency that balances its natural sweetness. Persistent, with an elegant and slightly saline finish.
