Bassus is an elegant and fresh red wine, made with 100% Pinot Noir from Bodegas Hispano-Suizas (Utiel-Requena). Aged for 10 months in French oak barrels, it offers a complexity that stands out for its freshness and finesse.
Recommended pairing: semi-cured cheeses, oily fish, white meats, and even roasted red meats. It also pairs well with mushrooms and sauced cod dishes, and fish in sauce in general.
Bassus is a red wine made entirely from Pinot Noir grapes from limited-production vineyards that ensure exceptional quality. The grapes are harvested manually in 15-kg boxes in the morning to preserve the freshness of the grapes. Once in the winery, the bunches are cooled to -10°C before being destemmed and placed in new 400-liter American oak barrels, where they cold macerate at 8°C and ferment to 26°C.
After a 12-day maceration, the grapes are gently pressed, and the wine is transferred to new 300-liter French oak barrels, where it ages for 10 months before undergoing light filtration and bottling. The result is a Pinot Noir with a Mediterranean character, delicate on the nose and with a complexity on the palate that makes it a unique reference in its category.
