This wine stands out for its hand-harvested grapes and spontaneous fermentation. A light, bright ruby color, it displays an intense aroma of fruit on the nose. On the palate, its voluptuous entry reveals red fruit and a delightful persistence. A wine with depth, mineral character, and a touch of herbal and floral elegance.
Recommended pairing: Perfect with Iberian cured meats, aged cheeses, grilled meats or a good lasagna.
Garnacha from the Los Peros area at an altitude of 850 meters. Old vines, around 100 years old, and granite soils with outcrops of red granite (epi-sienite). The vineyard is located within a SPA (Special Bird Protection Area) and part of the Natura 2000 network. The vineyard is dry-farmed, with traditional bush-forming and organically cultivated, registered with the CAEM (Committee for Organic Farming of the Community of Madrid).
Harvested manually in 15 kg boxes. Spontaneous fermentation, gentle maceration for 60 days with whole grapes. Aged for one year in 500-liter French oak barrels.
Visual: A light ruby red color, clean and bright.
Nose: With a high aromatic intensity on the nose, we perceive aromas of red fruit, such as ripe cherry, and black fruit such as blackberry. Spicy notes such as black pepper and a light balsamic touch.
Palate: A very voluptuous, energetic, and vibrant entry on the palate, revealing ripe red fruit like strawberry. Balsamic spices such as cedar and sandalwood. A very flavorful and persistent wine.
